Making a Christmas cake?

I love fruitcake...that an eggnog are about all Christmas has going for it in my opinion . Will have to try the recipe when I feel like converting to metric...(they tried teaching us metric in US but gave up after a few years as we are a dense lot ) .

Let me know how your cake turns out and any suggestions for tweaking the recipe . (I will be leaving out the booze as I am to cheap to buy a bottle just to make cake .)

I might have left it in the oven 5 mins too long. I used a non-deep cake tin, which changes the cooking time required. My advice is to play it by ear, and turn down the heat if the cake looks like getting too dark on top, or rising too facst with a hump in the middle, and test with a skewer leading up to the set cooking time.

After the cake is cooked I like to brush the whole thing with brandy, and keep it in an airtight container in the fridge, as it is hot here.
